ROASTED BRUSSEL SPROUTS

I think as children we're programed to hate brussel sprouts. TV, movies etc...all follow the typical cliche that brussel sprouts are the worst vegetable and nobody, especially kids, could ever like them.

Well, I was always a little different. There wasn't a vegetable I didn't like as a child, but I know that is unique. However, while I didn't hate vegetables, they weren't necessarily anything I craved. But as an adult, I started roasting my brussel sprouts and it's a whole new world. They are now on my list of top 10 most favorite vegetables.

ROASTED BRUSSEL SPROUTS
(Mindi Original)

2 C. brussel sprouts, cut and washed (if they are small, cut them in half; if they are large, quarter them)
3-4 T. olive oil
Salt & Pepper
Parmesan Cheese (optional)

1. Preheat oven to 400 degrees.
2. Prepare a sheet pan by preheating it in the oven for 5 minutes.
3. Place the prepared brussel sprouts in a large zip lock bag.
4. Drizzle with olive oil and salt & pepper.
5. Shake the bag well until the sprouts are coated with oil and seasoning.
6. Take prepared sheet pan out of the oven and spread the brussel sprouts out evenly. Try not to let them touch each other.
7. Bake for 15-20 minutes, until crispy on the outside and soft in the center.
8. Take out of the oven and sprinkle with Parmesan cheese. (optional)
